Round vs Conical vs Sloped vs Flat Bottom Tanks:

Conical Bottom Tank: The cone shape of a conical bottom tank concentrates solids from olive oil or wine during the separation process at the center of the tank.  There are some wine and olive oil producers who will only use conical bottom tanks as they believe the settling out of solids and contact with the solids during the settling process to be better.

Round aka Dish Bottom: A rounded bottom tank combines the best attributes of the conical bottom and sloped bottom tank.  The center low point, like a conical bottom tank, allows the concentration of lees and other solids in the center of the tank, while the trough or valley allows for easier removal of solids and cleaning.

Sloped (Inclined) Bottom Tank: Ensures efficient drainage and easier cleaning compared to conical or flat bottom tanks. 

Flat Bottom Tank: Typically used for storage red wines or olive oils or for fermentation of white wines, these are cost-effective but more difficult to remove solids from or clean.
