The OLIO Decanter by Zambelli is intended for the traditional method of separating sediment from olive oil after pressing. When water is added to the decanter, the oil and water naturally separate, with the water settling beneath the oil. As the two fluids separate, any residual sediment in the oil will sink to the bottom of the decanter with the water. Once the sediment has settled, more water can be slowly introduced via the lower valve (typically from a faucet or low-flowrate pump) to raise the olive oil and force it out through the top port, whilst maintaining the separation of the two liquids and allowing the sediment to remain within the decanter. The sight glass mounted to the top outlet piping allows the user to monitor the extraction of the oil and use the equipped valve to stop the flow once the water reaches the sight glass.
